perfect adobo

I had been struggling in the past four months…  struggling to cook an adobo.  One time, it was so salty because of exaggerated amount of soy sauce.  On my next try, it was kinda sour due to vinegar overdose.  After relentless efforts, I ended using the Mama Cita’s ready-mix adobo powder.

But today!  I finally got to cook the perfect adobo.  That same great taste of adobo back home!  Here’s  how I did it.

Chop lots of garlic.  Saute in a heated pot with small amount of corn oil.  Add the pork, salt, pepper and sugar.  Cover and mix from time to time until the pork becomes almost fried.  Add a small amount of soy sauce and cover again.  Allow some time to let the pork absorb the aroma of garlic and soy sauce.  Add half cup of water and simmer until the pork is well done.  Put some cubes of potato and simmer again until the water has dried-up.  Sprinkle a small amount of vinegar and simmer again.  Perfect!  I had it for lunch and dinner.

By the way, this is not my recipe.  I made a call in PH to ask the procedure from our household help.  Whew!

coin-cidence

Our team has moved to the main building because the company has not renewed the contract for the office space that we used to occupy.  Not much effort is required on my part because I do not have many stuff to carry.  I just packed my laptop and some documents then headed to our new place.  It is not that far anyway.  Actually, it was the building next to where we are.

My new workplace is much better because there is a window nearby.  The view is not so spectacular but it helps to be staring outside once in a while especially during stressful moments.  It also gives an ambiance of being in a much wider space. 

I had one bizarre experience on the first day.  While trying to fix the cable and electrical wirings underneath my desk, I found a coin.  I thought it’s the usual one dirham denomination.  But I was dumbfounded to see the face of Jose Rizal.  It was a one-peso coin in a very unexpected corner of this world.   On how it got there has perplexed my mind but the sure thing is it’s with me now.  Finder’s keeper!

best kids

Trek got seven medals and two ribbons in their annual recognition day.  He was best in finger printing, brush painting, english poem recitation, and UN day costume.  He landed second in english self introduction, math competition and spelling bee.  He was third place in sandwich making and name writing competition.  On the other hand, Coleen has started in her weekly ballet class. 

Congratulations Trek!  Keep it up Coleen!
