I had been struggling in the past four months… struggling to cook an adobo. One time, it was so salty because of exaggerated amount of soy sauce. On my next try, it was kinda sour due to vinegar overdose. After relentless efforts, I ended using the Mama Cita’s ready-mix adobo powder.
But today! I finally got to cook the perfect adobo. That same great taste of adobo back home! Here’s how I did it.
Chop lots of garlic. Saute in a heated pot with small amount of corn oil. Add the pork, salt, pepper and sugar. Cover and mix from time to time until the pork becomes almost fried. Add a small amount of soy sauce and cover again. Allow some time to let the pork absorb the aroma of garlic and soy sauce. Add half cup of water and simmer until the pork is well done. Put some cubes of potato and simmer again until the water has dried-up. Sprinkle a small amount of vinegar and simmer again. Perfect! I had it for lunch and dinner.
By the way, this is not my recipe. I made a call in PH to ask the procedure from our household help. Whew!
Adobo was the first dish I learned to cook on my own. I was 9 and my mum let me do everything by myself. That was the beginning of my love affair with cooking. I’d like to think I’ve gotten quite good. Congratulations on making your perfect adobo from scratch! That is definitely worth celebrating! Good day and blog on!

I tried this recipe but unfortunately I think I put a little too much vinegar in…
But it still tastes good, so I think if I got it right, it would’ve been perfect.

@van … nice try! … ganyan din ako … the key words are … “small amount”… pero usually.. it depends on your taste.. either mas marami toyo … or mas marami suka … but remember.. hindi dapat equal… oks!..

Congrats on the perfect adobo, it sounds mouth-watering! I like mine a bit more vinegary so I add more vinegar, less toyo.
One thing I have never been able to cook successfully is chicken/pork humba dishes - the ones that they always have in Filipino company cafeterias, which are my favorite. It’s the combination of sweet, sour, salt, and tomato that makes humba a special dish. Happy cooking!
